Smoking Takes Time
When using a smoker for the first time, many people don’t realize that it takes longer than grilling or barbecuing. You should be prepared to invest a few hours into the process, but we promise that the wait is worth it!
When using a smoker, be sure not to overload it with wood. Too much smoke can actually make your food bitter. Ideally, you want a constant stream of smoke, not have it billowing out from the smoker.
Use the Right Wood
Not every type of wood is good for smoking. Choose hardwood such as hickory, apple, cherry or oak for best results. If using chips, soak them in water for at least an hour before using. Never use pine or other sap woods, as they don’t impart a nice flavour.
Keep Lid Closed
While it’s tempting to open your smoker to check on progress, every time you check, you’re allowing heat and smoke to escape—affecting the smoking process. Refrain from opening the lid unless you need to add wood or adjust the fire.
