What to look for when looking for a cold-weather smoker:
- A solid ceramic outer shell that will lock in heat, no matter how low the temperature falls. As a bonus, these types of smokers can also radiate heat, helping to keep you nice and toasty when you check on the food.
- When it’s cold out, you shouldn’t be opening the smoker too frequently, so make sure the smoker you’re looking at buying has the ability to smoke/cook for long periods without requiring a fuel refill.
- Check to see that all latches are made of high-quality material such as stainless steel to help prevent corrosion in the snow/ice.
Kamado smokers are the best option for winter smoking in Ottawa. The ceramic shells provide insulation to maintain the temperature inside the unit and can work through harsh winter conditions.
