What is a kamado smoker?
Based on a Japanese design, a kamado smoker is a wood/charcoal-burning vessel that usually has an egg shape and is made of ceramic. The unique style and thick insulation makes it perfect for long cook times.
What kind of cooking does a kamado do?
Part of a kamado’s appeal is that it’s extremely versatile. Setting it up for direct heat provides a perfect grilling surface while configuring it for indirect heating is suitable for smoking.
What type of charcoal should be used?
When using the kamado smoker with charcoal, it’s always recommended to use natural lump charcoal because it burns hotter than briquettes, contains no additives, produces little ash and is environmentally sustainable.
What is the best way to light a kamado grill?
Never use lighter fluid or other flammable liquids to light your kamado because it can soak into the ceramic producing an odour and affecting food flavour. Instead, you can use an electric charcoal starter or charcoal chimney.
Is it hard to cook with a kamado smoker?
Kamados are extremely easy to use. Just remember that they are extremely efficient at maintaining temperature, so you need to make sure you don’t overheat it and once it’s reached the ideal temperature, leave it be! Kamado smokers don’t require constant tending like other charcoal grills.
