Grill Fish On Lemon Slices
Fish is notorious for sticking to grill grates—hence the popularity of cedar planks.
But another way to prevent fish from sticking to the grill is to use lemon slices as a buffer between the grill and fish. Not only will this help prevent sticking, it also helps infuse the fish with a fresh citrus taste.
Herbs in Charcoal
Add some fresh herbs to the hot coals when cooking over charcoal. Herbs like sage, thyme and rosemary can help impart a smoky flavour to your food—enhancing the overall taste.
Just remember that this only works with fresh herbs, not dry.
Use Rosemary Sprigs as Skewers
Speaking of herbs, did you know that rosemary sprigs can be used in place of wooden skewers?
Rosemary stalks are hearty and therefore are perfect when grilling meat. Not only do they help season the food, they provide a wonderful aroma while cooking.
Skip the Brush
If you only have a wire grill brush and are leery of using it—you can use an onion instead!
Simply slice the onion in half and firmly stick it with a fork. While the grill is still hot, brush the onion with the grates. Not only will the onion clear off baked-on food, it can help disinfect!
