BBQ Accessory Maintenance – How to Care for Wooden Cutting Boards
Every grill master knows one of the basic barbecue accessories that every griller needs is a quality wooden cutting board. Wooden cutting boards are great for preparing vegetables and slicing perfectly grilled cuts of meat, but it’s important to care for them properly if you want them to last for a long time.
Wooden cutting boards need to be seasoned whether they’re new or just haven’t had any care for a while. No, this has nothing to do with herbs and spices. Seasoning is when you coat your wooden cutting board with a specialized oil to prevent damage and the growth of bacteria. It’s essential to do when you first get your wooden cutting board, but you should also do it periodically to care for it once it has some scratches and wear that could make a nice home for bacteria. Make sure you use food-grade mineral oil, board oil, or board wax to season your board. Corn, walnut, and coconut oils can go rancid, so never use them as a substitute to season your wooden cutting board.
If you don’t care for your wooden cutting board and clean it properly after each use, it can become a magnet for bacteria. In most cases, wiping it down with warm running water and mild dish soap is enough. However, wood is porous, so certain scents like garlic and onion can linger even after you’ve washed your cutting board. Not to worry, just sprinkle your board with coarse salt and scrub it using half a lemon. Let the mixture sit on the board for at least 5 minutes before you rinse it off.
Assessing the Damage
Eventually, even if you care for your wooden cutting board properly, it will get damaged over time. It can get scuffed, dried out, scarred, and gouged, but you usually can fix it as long as it is an edge grain or face grain cutting board. All you need to do is sand your wooden cutting board gently with 180 grit sandpaper, following the grain while you do so. Then do the same thing with 320 grit or higher sandpaper. Once the board is smooth, wipe away the dust with a damp cloth and season it again once it has dried completely.
